What staling actually is

Staling is the gradual loss of the aromas that make roasted coffee taste clear, sweet and distinctive. Oxygen reacts with compounds created during roasting, while volatile aromatics escape into the surrounding air. The cup may become flatter, less fragrant and more papery. Darker roasts also have exposed oils that can develop a rancid character as time passes.

Freshness is therefore a rate rather than a fixed condition. The first few weeks bring the largest practical changes, while later changes usually feel slower but still accumulate. After about a month, coffee may remain safe to drink, yet its flavour can be noticeably dull. Paying attention to the timeline helps separate an ordinary ageing problem from a brewing problem.

Degassing and why resting helps

Containers, valves and vacuum

Pre-ground coffee
